An ex-banker from Delhi has traded his finance career for a chance to revolutionize the way Indians indulge in their favorite street food. Sagar Malhotra, who studied at Cambridge, has launched what he terms India's first Chhole Kulche vending machine—a game-changer that dispenses hygienic and personalized plates of the much-loved dish within one minute.

Having spent more than a decade working in the banking industry, Malhotra quit his job to pursue his culinary passion. His first outlet, Chakh De Chole, was in Rajouri Garden, and the second one was at Vikaspuri, and he now plans to take it to Jaipur and Bengaluru.

The inspiration behind the innovation

"I had an established career in the banking sector, but I always wanted to do something for myself. I went to Cambridge to study, and had a stable job, but deep down inside I wanted something different," Malhotra told India Today.

Being a die-hard fan of Chhole Kulche, Malhotra was frequently let down by the unhygienic and inconsistent nature of street stalls. That's when he dreamed up a completely automated vending machine that would dispense the dish at the touch of a button while ensuring quality and hygiene.

How does the machine work?

Malhotra's homemade vending machine is designed to have customers select spice levels—mild, medium, or hot—so as to provide every visit with an individualized experience.

It took him one year to create the machine, and he attributes success to his mom's encouragement of bringing this into reality.
