According to Lead Consumer Analyst at GlobalData, Parthasaradhi Reddy Bokkala, one of the primary causes of food waste in restaurants is poor demand forecasting. “Small- and medium-sized restaurants often have limited resources and experience, making it difficult for them to negotiate with vendors for better pricing or to find quality services that can aid in waste reduction,” said Reddy. This, as a result, causes over-preparation, and food remains unused.

According to the report, technology can make the operations of restaurants more efficient by optimizing purchases and reducing waste. Using more advanced inventory systems would make it easier to predict demand from customers and enable restaurants to prepare better.

Other food delivery platforms are taking their game a notch higher. For example, Zomato has the "Food Rescue" initiative that enables restaurants to manage their surplus food effectively. Similarly, the new order scheduling features on Swiggy and Zomato allow customers to place orders in advance, enabling restaurants to plan their kitchens efficiently and cut back on waste.

Large chains can afford to upgrade their technologies, but small businesses do not so much. However Reddy noted, that online food platforms can be very critical in bridging this gap. “The proactive approach of online food delivery platforms will help small businesses overcome financial challenges to invest in technology,” he said.
